Heavy cream or milk:
These create the rich, velvety texture. I prefer cream for extra richness, but milk or a blend offers a lighter version. Coconut milk can be a dairy-free alternative for a different flavor.

Butter and spices:
Butter adds depth and richness. Add paprika or thyme for extra flavor. If you’re avoiding dairy, olive oil or margarine can be used instead.

How do I prevent the chowder from curdling?

Gradually add the cream at a low simmer. Never boil after adding cream, as high heat can cause curdling. Stir constantly, and if it’s too hot, lower the heat immediately. Using full-fat cream helps keep the texture smooth.

  • Maintain a gentle simmer, not a rolling boil.
